Bunch of Flowers Cake

This Bunch of Flowers cake is ingenious in that you do not have to cut the cake and portion it out.

Each child already has their very own patty cake to eat! You can have enough of these beautifully decorated cakes for one per person plus some extras.

Yum! I love patty cakes!

The Bunch of Flowers cake does require a large surface to position the ‘flowers’ on with enough room for the stalks, leaves and ribbon which is tied around the stalks. We had a lot of fun making the patty cakes as we were all able to decorate our own!

Patty Cake recipes can be found in most recipe books for example, in the Everyday Cookery Book by Helen Bunney (page 105). This recipe makes approximately twelve patty cakes. However, mum uses her grandmother’s Madeira Cake recipe which makes twice as many patty cakes.

Madeira Cake Recipe
Ingredients:
8 ounces of Butter (230 grams)
3 Eggs
2 teaspoons of Baking Powder
8 ounces of Sugar (230 grams)
12 ounces of Plain Flour (340 grams)
4 tablespoons of Milk

Method:
1. Cream the butter and sugar.
2. Beat in 3 eggs one at a time.
3. Add dry ingredients alternatively with milk.
4. Place spoonfuls of mixture into patty paper in patty tin tray.
5. Cook in a moderate oven for approximately 15 minutes or until cooked.

Once the patty cakes have been cooked and have cooled the decoration can begin. To create the look of a bunch of flowers you will need:

1 packet of coloured Mini Marshmallows cut in half. Squeeze the ends together to form petals.
1 box of Smarties
1 packet of Spearmint Leaves
1 Ribbon tied into a bow

Basic Icing Mixture
1. Sift 2 cups of icing sugar (mixture) into a mixing bowl.
2. Add one tablespoon of butter/margarine.
3. Add boiling water very gradually to make a thick paste.
4. Using a bread and butter knife ice the patty cakes.
5. Dip the knife into a cup of hot water to smooth icing.
6. Before icing dries decorate with smarties and marshmallows.

Green Stalks
Using ready made white icing knead green food colouring through. Roll out to form stalks from each patty cake.

The basic idea for the Bunch of Flowers cake was found in the Australian Women’s Weekly Kids’ Birthday Cakes book (2002, p12 and 13).
